The Winery

 
The capacity of the winery is for 100.000 kg of harvest, and the average producción is of 40.000 bottles at the year.
Winemaking Procces.
The cluster is made on plastic box of 30 kg. The reception is in a sorting table with four people where is made the bunch selecction process.
The harvest is fermeted in stainless steels vats.The vat capacity range from 50 hetolitres to 180 hectolitres. The vatting period usually lasts a total 15 to 20 days.
After malo-lactic fermetation in stainless steels vats the wine is ageing in 225 litre oak barrels. The ageing time in barrel varies depending on each wine.
The process of stabilisation is natural.

• Wine tasting notes: Pale pink red colour. Afruity bouquet that is  complex and includes hints of strawberry. In the mounth, it is  pleasant, oily with body for a rosé and very agreeable finish.

• Wine tasting notes: Medium to high opaqueness with a  predominance in the colour of reds, but with purplish undertones.  Aclean, lively and attractive wine. There is a predominance of red  fruits and flowers. It is round, fleshy and velvety as a result of the  generosity of its tannins. The wood offers sensations of spice and  vainilla blended in the wine, leading to an exquisite, pleasant finish

• Wine tasting notes: Ruby red colour with intense iodised  undertones. At first, it offers aromas of fruit and compote.with a  mineral bouquet and a predominance of roast and smoked aroma. In  the mouth, it is elegant with an emphatic tannin complex with a  full-flavoured, velvety finish.
 


The cellar is located in the village of Torquemada at a distance of 20 jm from Palencia on the freeway from Valladolid to Burgos (A-62)
